We used to eat it raw dipped in sugar or honey all the time as kids

growing up in Wisconsin. It was one of my absolute favorites. Our

neighbor used to let us " steal " it from the other side of his fence,

too. We thought we were so sneaky, but most of the time he'd be

looking at us from his window just laughing and laughing because we

used to grab it and eat it plain with the most " puckery " faces!

Yay, so many Wisconsinites on this list!

I adore raw rhubarb. All sour things, really. Raw rhubarb stalks have

such a wonderful crisp texture and flavorful, sour taste. Crisper than

celery but without the stringiness. I even eat them without sweetener,

although only a few chunks are tolerable.

You can cook the stalks too, which gets rid of some of the sour taste,

and then eat them plain or with honey (or ice-cream, if you don't care

about NT).

Now I'm salivating...can't wait till early/mid-spring, AKA rhubarb

season. :)

Barbie, Tom, now you got me drooling, too! I have 2 rhubarb plants,

but I'm the only one who likes it in my family...some of my

neighbors help me eat it, though. When I read about it, it didn't

seem all that nutritious, but my bod seems to like it.
