My muffins won't cook and I'm desperate...

Just found this group and am extremely excited!

Sorry to be a bother so quickly, but I'm hoping that someone can

offer advice for my muffin baking. I have tried many times to make

the muffins in NT, only to have them be cooked or near burnt on the

outside and raw on the inside. I think that my oven is the problem.

It's about 11-12 years old. I was thinking of purchasing a counter-

top convection oven b/c I can't afford to purchase a new range.

Has anybody tried these?

Additionally, I would really like to make the muffins without any

sweetener. In January, I changed my diet (to real food), since then

and especially now, I cannot eat any sweetener without feeling

drunk. My situation is worse now because I am expecting (end of

May), and the effect from sugar is much stronger, intolerable. Plus,

I'm having terrible morning sickness and am finding it very

difficult to eat, most things make me nauseated, even just the

thought of them – although I have been able to keep most of my

food

down.

Back to the muffins – the only breakfast food, (in addition to

the buttered toast) I can keep down. Right now, I can make perfect

*unsoaked* unsweetened muffins from applesauce, butter, buttermilk,

eggs, salt, whole wheat, banana, nuts, salt, baking soda and ascorbic

acid. I hate the thought of all that phytic acid binding up my

minerals, I compensate throughout the rest of the day by eating a lot

of cheese and other nourishing foods.

I would sincerely appreciate any suggestions,
