, My 89 year old father lives with me and I have faced similar problems

with him. I also adhere to scd due to chrons/colitis. every morning he has a

smoothie w/ well aged kefir and a really ripe organic banana, and 2 raw egg

yolks. I make him cookies using ground organic coconut ( I freeze the dried

coconut before grinding and it makes for a much finer grind), eggs, well cooked

yellow squash, ( I like to use tahitian when I can get it because it is so sweet

dont even need honey), organic glycerine vanilla, orange rind, cinnamon,

ginger, sea salt, and baking soda. If necessary to get the correct consistency,

also add a dollop of organic almond butter. Like I said, if the squash is

sweet enough, I dont even add honey, one time the cookies were not sweet enough,

boy did I hear about that :-), so I added a dollop of buckwheat honey on top of

each cookie when I served him. I make sure to put in a lot of eggs so he

gets a good amount of protein. He likes the cookies sort of soft from the oven,

like mine crispy, so I finish mine in the dehydrater. I also make him tomato

soup, using homemade chicken or beef bone broth, organic tomato, a little bit

of dripped yogurt or kefir made from cream and sea salt. I heat everything

including some of the chicken or beef from thebroth, and grind w/ the bamix and

serve it in a mug and he loves it because the tomato is sweet. I add the kefir

or yogurt cream at the end, after it is heated. my dad has no idea that there

is even meat in the soup.......oh I often add some fresh basil if I have it

handy.

good luck to your mom, I know how tough it is to be ill and to be caring for

someone else, especially following scd and not having the option of going out

to eat, w/o the fear of some reaction.
