Guest guest Posted February 28, 2001 Report Share Posted February 28, 2001 I am fortunate to be able to get the real thing and actively make cream cheese and whey. I have had good luck with both. The secret is to find the perfect place to keep it while it sours. I have a closet with a light in it that I leave on. I also have shelves in it and so I used a thermometer to determine which self that I should use. I did notice that they seem to be easier to make when the cows are on pasture. I also use a lot of clabbered milk. I use this when it calls for buttermilk. I do use the piima culture that you make with the starter that is available through Price-Pottenger. You only need to get it once, then you just use 1 TBSP of your old piima culter and add it to 1 cup of raw cream to make a new batch. I actually ordered 2 packets of culture just in case. I was glad I did. The first batch that I tried didn't turn out. But my second was successfull and I have success ever since. I am also very lucky to have an oven that you can set as low as 100 degrees. If anyone is in the market for a new oven, my Jenn Air oven has been a god send. You are right, that you have become stronger at detoxing, but cheat foods are still feeding candida so you will get reactions. I'm more sensitive to chemicals in foods than I was before, but the difference is I get such minor symptoms in order to get rid of them. I might cough once or twice or blow out my nose, and that's the end of it. It is because my body has become so much more efficient at detoxifying. I can't tolerate low-fat dairy products, but of course the fat in dairy products is what helps our bodies break down lactose and proteins in them. I'm okay with 10% butterfat content or more.
