I am fortunate to be able to get the real thing and actively make cream

cheese and whey. I have had good luck with both. The secret is to find

the perfect place to keep it while it sours. I have a closet with a light

in it that I leave on. I also have shelves in it and so I used a

thermometer to determine which self that I should use. I did notice that

they seem to be easier to make when the cows are on pasture. I also use a

lot of clabbered milk. I use this when it calls for buttermilk.

I do use the piima culture that you make with the starter that is

available through Price-Pottenger. You only need to get it once, then you

just use 1 TBSP of your old piima culter and add it to 1 cup of raw cream

to make a new batch. I actually ordered 2 packets of culture just in

case. I was glad I did. The first batch that I tried didn't turn out. But

my second was successfull and I have success ever since.

I am also very lucky to have an oven that you can set as low as 100

degrees. If anyone is in the market for a new oven, my Jenn Air oven has

been a god send.

+++Hi Chris. You are right, that you have become stronger at detoxing, but

cheat foods are still feeding candida so you will get reactions.

I'm more sensitive to chemicals in foods than I was before, but the difference

is I get such minor symptoms in order to get rid of them.

I might cough once or twice or blow out my nose, and that's the end of it. It is

because my body has become so much more efficient at detoxifying.

I can't tolerate low-fat dairy products, but of course the fat in dairy products

is what helps our bodies break down lactose and proteins in them. I'm okay with

10% butterfat content or more.
