Guest guest Posted August 5, 2001 Report Share Posted August 5, 2001 I am still in the process of trying to make my own whole wheat tortillas and have been using a recipe I've developed, but wanted some feedback on it. And maybe ideas from others about how to make them. Whole Wheat Tortillas 1 c. warm water with 2 Tbsp whey or yogurt 2 Tbsp melted butter 1/4 tsp salt 2 c. ww flour pinch of cinnamon Place wet ingredients in a bowl, add dry and 1 cup of the flour. Add flour in 1/2 cup increments until you have a moist and supple dough. Knead in mixing bowl or on counter for about 5 minutes, or til soft, smooth, and springy, adding as little flour as possible. Place in a covered container and let sit out at room temp overnight. To cook, I roll a bit of the dough on a well floured pastry cloth and rolling pin. Then use a spatula to pick them up and quickly place on the hot griddle. They cook in about 30 seconds to 1 minute or so. I guess I'm not sure how much good the whey is doing with predigesting the flour with the salt present in the dough as it is soaking. My next step is to try to make them similar to the cracker recipe where you soak only the flour and the water/whey, then add the other ingredients. But I thought I would post this to see if anyone had any imput to give me. Bonnie, don't you have a recipe for tortillas?? (hint, hint!!)
