Guest guest Posted August 5, 2001 Report Share Posted August 5, 2001 I have come up with a wonderful alternative to buying boxed commercial cereals...homemade cereal similar to Grape Nuts. My reason for this is because my husband likes cold cereal rather than hot ones, so I'm trying to come up with one that is healthy and cheaper. What I'm wondering is if this fits in with NT's principles and is it truly healthy or not ( I know it's gotta be better than storebought junk). Here it is... 3 1/2 cups of whole wheat or spelt flour 2 cups water with 4 Tbsp whey or yogurt in it 3/4 cup of sucanat (or smaller amount of honey) 1 tsp baking soda 1/2 tsp salt 2 tsp. vanilla extract large pinch of cinnamon Mix flour with water/whey mixture and let soak overnight. Mix other ingredients together and blend with soaked flour. Preheat oven to 350. Spread mixture on a greased cookie sheet, 1/4 inch thick and bake for 25 minutes or till lightly browned. Remove and place on a cooling rack and let cool just a bit, then crumble into 1/4 inch or so peices. Spread on a baking sheet in a single layer and dry in oven at 250, stirring every 10 minutes, until crispy and dried, about 45 minutes approximately. Let cool and store in airtight containers. So, my question is...does the reheating at 250 cause a nutrient loss or is it OK? I know a dehydrator would probably be a better idea, but it would take all day I'm sure.
