Guest guest Posted April 14, 2005 Report Share Posted April 14, 2005 I wanted to add here that celiac disease (gluten intolerance) destroys the tips (and often more) of the villi in the small intestine - exactly where we digest milk sugar aka lactose...so...lactose intolerance is often a FIRST symptom of gluten sensitivity. Many who are neurologically sensitive to the protein in wheat aka gliadin are also sensitive to the protein in milk aka casein. For many, going on a GF/CF diet (gluten-free and casein-free) makes an enormous difference in neurological/ADD/ADHD/Austism symptoms. For me personally, going 100% gluten-free cured my lactose intolerance. Now I'm hoping the explant (I'm post-op two weeks) will be one more final boost on my road to healing. At the age of 12, she realizes it simply isn’t worth cheating on her diet because of the pain that always accompanies it. Because we caught the disease so soon after it manifest itself, she didn’t develop any additional food intolerances. My son, Tyler is off lacose, or milk products for 6 months until his gut gets a a better to chance to heal on a gluten free diet. Like you, I believe he got a secondary allergy to milk,until his villi are repaired. He has alot of bloating and irratibility after consumtion. I seem to be fine with milk products. You are almost and I'm sure will do wonderfully with your knowledge and go get them personality! For me it was empowering - to know that my food choices could heal me - or hurt me - in such a direct manner...Wow. I ran with it. I love living gluten-free. I feel so much more energy (and mental focus, too). The first year GF was a lot of healing...slowly...then the second year I really took off, and I regained the ability to do dairy again. I avoid soy, and limit my sugar, too. If you need any recipes, resources, etc...e-mail me and I'll be glad to share! On a side note: I went bathing suit shopping today - what a strange (but fun) experience, trying to find the SMALLEST bikini top I could find...hee hee. Thank goodness for Calvin Klein! Calvin never forgets us small girls. :-) I got a really cute little print bikini top (triangle style) with a contrasting boy-short-hipster bottom (at TJ Maxx, half price!). Wild Oats carries it, as well as other health food stores and even some regular grocery stores. The crust is made from rice flour. There are also many good pizza mixes that are GF that are good. I have a couple of Gluten Free Gourmet cookbooks too and they are excellent. The breads are really easy to make and taste yummy! The yeast breads are so easy too because you don’t kneed the bread like typical recipes. The bread is made from a batter. Kenda Moss, any good pizza ideas for my son? Glten free?
