This winter, though, I finally found one that surprised me, it was so good! Do you know the Gluten Free Pantry? www.glutenfreepantry.com (You can order her stuff on-line or find it in health food stores/supermarkets.) GF Pantry makes a new biscuit mix called " Quick Mix " . I took the mix and used it like Bisquik to make a yeast-free crust - and it was so yummy! Our favorite so far. Crispy on the outside, light and a little chewy on the inside. Here's my basic recipe:: California Pizza Crust:: 2 cups GF Pantry's Quick Mix - or - Pamela's Pancake & Baking Mix 1/3 cup grated Parmesan cheese 1 tsp Italian Herb seasonings 1/4 scant cup light olive oil 3/4 - 1 cup cold water, as needed Toppings:: 1 1/2 cups shredded Jack or your favorite cheese (6 oz.) 1 cup GF tomato sauce (we like Muir Glen) 1/2 cup ripe olives, sliced 1 ripe tomato, sliced 1 ripe avocado, sliced 1 tsp herbs - basil, oregano, cilantro, garlic, etc... 1. Preheat oven to 425 degrees F. 2. In a mixing bowl, stir the Quick Mix or Pamela's Baking Mix with the seasonings, cheese, olive oil and cold water just until a soft dough forms. Pat dough out to a circle on a pizza pan dusted with GF cornmeal; pinch a slight edge. 3. Sprinkle half of the cheese over the dough. Bake the crust for 10 minutes. 4. Spoon tomato sauce over the top. Sprinkle with olives, sliced tomatoes, herbs. Top with remaining cheese. 5. Bake for another 10 minutes or until the crust is golden brown.
