Asperger's is a Syndrome: that is roughly that the condition manifests certain traits. The point is that there is a basket of traits that AS features. Some of those traits are more common than others and those traits come in different flavors and degrees. So, it is quite possible to be AS in the classic sense or have few or no common traits but a few less common ones. It could also be possible to have, say, sensitivities that are more at the annoyance level and only a few things, while others may be almost crippled by theirs. The same goes with interests. Some people may be almost fanatic about some things while others may have a broader range of things that hold their interest. With me, most of my sensory issue are auditory. I have a lot of trouble screening out extreneous noise to focus on a project. Touch is only an issue with certain kinds of paper or when rubbing some things against other things (like a T shirt or something against a plaster wall). My interests are varied and the focus rotates between them. But when that interest is up, the drive is intense. Due to all this variability between people with AS, I think that is why they are starting to refer to it more as a continuum rather than a syndrome.
