Wouldn't freeze well in what sense? I freeze whole milk in ice cube trays and it works fine. You can store it in zipper bags and use the cubes as you need them, either thawed, or put in the blender frozen for smoothies. I don't think I've ever tried thawing it out and serving it just straight up, but I don't think it would be a problem except for maybe not tasting quite as fresh. (I freeze stock the same way.) I've never tried to make butter from cream that's been frozen and thawed, but I don't see why it wouldn't work. Has anyone done this? But the fat stays mixed in with the milk more than with cow's milk, so I'm not sure how cow's milk would freeze. And I'll agree with that whatever the goats eat affects the flavor of the milk. My last batch had a twang to it because of that!
