Guest guest Posted September 30, 2001 Report Share Posted September 30, 2001 This was REALLY good: Crust: 2 c. combination soaked in brine (1 T. salt/gallon), then dried nuts & seeds 1/2 c. pitted dates Grind and pack firmly into 9x13 or cheesecake pan. Filling: 4 eggs, separated 1-1/4 c. milk 2 T. gelatin 4 c. soft cheese (any combination ricotta, cottage or cream cheese) 1/2 c. honey 1 T. vanilla In food processor, combine cheese, honey & vanilla, process till smoothe. Put egg yolks in sauce pan with milk, beat lightly, sprinkle gelatin and warm slightly until gelatin is dissolved. Pour yolk mixture into cheese mixture while processing. Put this mixture in the fridge to set a bit while beating the eggs stiff. Then fold eggs into the mixture and pour into crust. Chill for several hours.
