I was was canning corn yesterday and have a bunch more corn to do tomorrow. Does anyone know how long the corn relish lasts in cold storage? Will it be fine all winter long? Is there a better way other than cold storage for these relishes? I know many people can corn relish, but I really did not want to cook it and lose all the enzymes for digestion. This is the whole point of fermenting vegetables! I only have one fridge which I would have plenty of room for the corn relish, but not any other relishes for storing. Last year I made lots of sourcrout and it was wonderful. We had it for most of the winter. I made it in different batches and some of it I opened in two months while other four months. Maybe I can do the same thing with relishes. Store them covered tightly so no oxygen reaches it and then take out a batch as we need it. I would like to try brine pickles this year too. I have recipees for this. Experiments are fun I just do not want to lose a bunch of corn.
