Hi a - Slimy is an excellent way to describe viili! When you try to

scoop a spoonful out it's almost impossible as it won't let go, as you said,

it's like melted cheese! I toss it in the viili in a blender, add some

berries, frozen bananas, vanilla or whatever and the kids drink or eat it,

depending how thick it ends up. They really like it. I haven't tried

soaking any grains in it yet. It is so easy to make I would love to discover

some other uses for it.

Viili is a cultured dairy product available from GEM cultures at 30301

Sherwood Road, Fort Bragg, California 95437 - 4127. Their phone number may

actually be in the back of the Nourishing Traditions book on the sources

page. All I have here is their mailing address. It's really easy to make,

works well in raw and pasteurized dairy products. Is a little like yogurt

only sweeter and slimier. I also got my kefir and fil mjolk dairy cultures

from GEM. Fil Mjolk is like a buttermilk. Kefir is discussed in the book.

OK I'll try it. I just have a hard time getting it to my mouth!! I am thinking maybe when you blend it the slimyness may go away a little?

I've fermented coconut milk with both viili and piima. Both worked.

But I didn't try to reculture anything from the resulting cultures so

I don't know if they are viable.

But the taste is great! (I prefer the Piima.)

Piima is another one of those dairy cultures, used to make " piima

cream " , something like creme fraiche. It gives a nice thickened and

sourish result, but not as gelatinous and sticky as the viili. I got

mine at G.E.M. Cultures, on the web.
