When you try to scoop a spoonful out it's almost impossible as it won't let go, as you said, it's like melted cheese! I toss it in the viili in a blender, add some berries, frozen bananas, vanilla or whatever and the kids drink or eat it, depending how thick it ends up. They really like it. Their phone number may actually be in the back of the Nourishing Traditions book on the sources page. All I have here is their mailing address. It's really easy to make, works well in raw and pasteurized dairy products. Is a little like yogurt only sweeter and slimier. I also got my kefir and fil mjolk dairy cultures from GEM. But I didn't try to reculture anything from the resulting cultures so I don't know if they are viable. But the taste is great! (I prefer the Piima.) It gives a nice thickened and sourish result, but not as gelatinous and sticky as the viili. I got mine at G.E.M. Cultures, on the web.
