Hi Leanne

Speck is like a side of bacon, just not sliced up. It is quite fatty so you would cut it into bite size cubes and then cook it well down so the fat in it renders. It has a wonderful smoky flavour. You would buy it from the deli. I think its also called pancetta (Italian) and speck is the German term. I cooked it in a little olive oil, and then added the onions and garlic for my lentil soup yesterday.
