It is quite fatty so you would cut it into bite size cubes and then cook it well down so the fat in it renders. It has a wonderful smoky flavour. You would buy it from the deli. I think its also called pancetta (Italian) and speck is the German term. I cooked it in a little olive oil, and then added the onions and garlic for my lentil soup yesterday.
