Sour oatmeal

A few weeks ago, someone on the list was having oatmeal porridge

taste too sour. I've realized something about the oatmeal that seems

to make it taste more sour. I've been eating it myself with no

complaints...it just takes a teaspoon on honey to cut the small

amount of sourness I was getting. But when I ate my mom's soaked

oatmeal the other day, it was hard to get down because it was so

sour. The only difference I can attribute it to is the kind of

oatmeal. Rolled oats come in different grades it seems, and mine was

just barely rolled flat, the whole oat was still intact, just

flattened. Hers was definately more like oats that were rolled even

more because they are not as intact. Kinda like a quicker cooking

type of oatmeal.

This may be what is causing your problem...

I've noticed a big difference based on the product you use for soaking the

oats in. We like the oatmeat best when it's soaked in water with some yogurt

whey added to it. We found the buttermilk and kefir soaking solutions to

produce a much more sour oatmeal. Also, we serve it with cream or creme

fraiche added to it. Yum!

Our oatmeal doesn't taste very sour, either. I soak

it in filtered water with whey added (either yogurt or

raw milk whey, whatever I have on hand). I like it

best with cream or creme fraiche and maple or sorghum

syrup.

Hi Becky and list--

This is interesting. I was kind of puzzled by the messages about sour oatmeal because mine doesn't taste sour at all. I'm using whole oats and cracking it and then soaking in water with yogurt in it. After soaking overnight it cooks up very quickly. My boys love it--Josh eats it with honey and milk but likes it with just butter. I wonder why rolled oats would make it taste more sour?

I think some grinders can do this but I don't have one at home--I borrow my Mom's for grinding wheat. So I just use the little blade mill that came with my Bamix mixer--it just has a blade and I put in the oats and process for about 10 sec (more and it gets to fine)--the whole oats gets cracked into smaller pieces.
