Below I have included an interesting bit of information related to sea vegetables. I teach many people about their importance, in private health consultations, in cooking classes, in lectures, and one of the things I like to say, is that sea vegetables provide " natural chelation " , in fact the entire macrobiotic diet is naturally chelating. In other words, it removes heavy metals, radiation, and toxins from the body. And please also note, that sea vegetables contain vitamin B 12, a topic of concern for many of my clients. So enjoy the article: Why eat seaweeds? Human blood and body fluids are similar in chemical composition to sea water, containing over 80 minerals and trace elements. Without replenishment of these nutrients, we become weak hosts for infection. Sea vegetables concentrate these nutrients from sea water in a form that is assimilable by the human body, making seaweeds a truly natural and holistic mineral supplement. All seaweeds contain protein, especially nori and dulse. All contain vitamin B-12, a necessary vitamin unavailable from land vegetables. Most are rich in vitamin A and many species are rich in vitamins B and C. The carbohydrates (sugars and starches) in seaweeds become more assimilable by the digestive system as one eats them over time. Many contain gels in one of three types: algin, agar or carrageenan. These gels have thickening and toxin eliminating properties.
