Oatmeal cookies

7/8 cup oat flour or 1 cup rolled oats blended into oat flour

(7/8 cup = 3/4 cup + 2 tbls.)

1/4 cup tapioca starch (I'm sure arrowroot would work too, or corn if you're

not allergic)

1 teaspoon baking soda

1/4 teaspoon unbuffered vitamin C crystals *

1/4 teaspoon sea salt

1/2- 1 teaspoon ground cinnamon

1/2 cup Brazil or macadamia nuts** or 2 tablespoons walnut or canola oil

3/4 cup apple juice concentrate, 3/1

1 1/2 cup rolled oats

3/4 cup chopped walnuts OR an additional 1/2 cup rolled oats

* If you're not allergic to corn or have a baking powder you can use, you

can substitute 1 1/2 to 2 teaspoons of baking powder for the baking soda,

unbuffered vitamin C combination.

** Preparing recipe with nuts yields cookies that hold together slightly

better than those prepared with oil

1. Preheat oven to 350 degrees (about 175 Celsius)

2. If using rolled oats rather than oat flour, blend one cup rolled oats in

blender on high to make 7/8 cup of flour.

3. In large mixing bowl, whisk together all dry ingredients except rolled

oats and nuts.

4. If using Brazil or macadamia nuts: Add to blender and blend to create nut

butter, being sure to make it as smooth as possible. Add apple juice to

blender and blend on high a few seconds longer.

5. Add step 4 and nut mixutre OR oil and apple juice to dry ingredients.

Stir with rubber spatula until mixture forms a " sloppy " dough. Add rolled

oats and nuts and stire to forma soft batter.

6. Drop dough by rounded teaspoons onto cookie sheets approximately two

inches apart. Bake 10 minutes. Immediate remove cookies to cooling rack to

cool.

keep it because it's got wheat in, but now i need it for the recipe

If all else fails Keto has an oatmeal cookie mix that's low carb and

has protein powder in it.
