Here's a delicious biscuit recipe that's light and fluffy:

1/2 c sourdough starter

1 c raw milk

1 c flour (I use spelt)

Mix the above and let it sit in a warm place for 12 hours. Mix together the

following:

3/4 tsp salt

1-1/4 tsp cream of tartar

1-1/2 c flour (I use spelt)

Cut in 1/3 c butter.

Dissolve 1 tsp soda in a little warm filtered water and add to sourdough

mixture.

Add dry ingredients.

Knead lightly to mix. Add a little extra flour if need to. Roll out on

pizza stone 1 " thick. Cut into pie shaped pieces and pull apart creating

individual biscuits. Let rise 45 minutes. Bake at 375 for 30 minutes.

Serve with lots of butter.

It would be interesting to try the above with kefir in place of the milk and

no cream of tartar or baking soda. I'll save that for another day when I'm

in need of some dog food (just in case!).

Biscuit recipe

I have a good (and easy!) non-dairy biscuit recipe if anyone wants it.

Someone here suggested I substitute the buttermilk with a soy milk and vinegar

combo (1 tablespoon vinegar in a 1 cup measure, then fill to 1 cup with soy

creamer) and it works great! My husband couldn't tell it apart.
