Guest guest Posted May 9, 2006 Report Share Posted May 9, 2006 the issues with b12 in tempeh and other fermented products and sea veggies is very different. the b12 in ther fermented products is a true b12 - this is the same as the one that is in animal products. It is only found in animal products because the animals make it in their intestines - as we should if our intestines are in good shape - however this is rare - having good intestines I mean! the issue then with fermented foods is do they actually contain the B12. In the past or in traditional cultures tempeh had lots of it. however now it is often made in super sterile environments and some brands may bot contain any. the one I buy has the b12 content specified. homemade pickles - easy to do - place veggies in brine and wait! are another good source for many people still it is a good idea to keep an eye on b12 levels as a deficiency can cause a lot of serious issues like christina pirello recently wrote about the jury is still out on the quanilty of b12 in sea veg and micro algae like spirulina. There is also the issue of analyzing them as raw (Which is not how they are usually consumed) or cooked - eg wakame in miso soup may behave differently than in a lab... then of course you have the synergism of the fermented miso etc....
