Guest guest Posted April 3, 2005 Report Share Posted April 3, 2005 > does anyone have a recipe for oatcakes? rolled oats, brown rice syrup, > dried fruit? thanks, sarah , For a sweet treat, I make a whole foods version of a Rice Krispies bar, or what we call an oat bar... 1 jar (1 lb. 5 oz) of Lundberg Brown Rice Syrup 8 cups of a mixture of cereals-- 3 1/2 cups rolled oats and 4 1/2 cups of puffed cereals (rice, kamut, corn, millet, wheat)1/4 sheet of toasted nori, or some dulse, shredded into tiny pieces (simple to tear with your fingers) And then for variety and to taste... Pan-roasted pecans or walnuts Dried Fruit Carob chips... Pan-roast your rolled oats, then place in mixing bowl with puffed cereals, sea veggies and other ingredients if desired. (If using carob chips, note that they'll melt if placed in the mixing bowl--which is excellent. If you wanted them to remain somewhat together, see below.) Pour rice syrup into sauce pan and place over medium heat. When syrup starts to bubble, add a pinch of sea salt. Continue to stir as syrup comes to a rolling boil--it will get frothy and start to rise. Pour boiling syrup over cereals and other ingredients in mixing bowl. Mix dry ingredients thoroughly with rice syrup. Then, pour mixture into dish of your choice--a long, shallow pan if you want a thin oat bar, or a deep dish if you want a thicker bar. Wet your hands and press ingredients down. If you want to use carob chips, pour about half of your cereal-syrup mixture into the pan; sprinkle a layer of carob chips on top; and then pour the rest of the mixture on top and press down. The heat from the mixture will melt the chips, and you'll have a thin layer of carob in the middle of your oat bar. Yum! The oat bar's great hot. If you let it sit for awhile, the flavors tend to harmonize, and the bar sets. Then, use a good, sharp knife to cut into pieces. I like to cut into thin, long strips--sort of like biscotti. The oat bar's great served with hot tea--particularly bancha. If any of my directions are confusing, please let me know. Be creative with the ingredients! There are so many variations! Adding a little bit of cinnamon to the rice syrup while you heat it up is great. Or mixing some almond butter with the rice syrup while heating is really good, too!
