One because most of it is home raised with no additives to the rabbits foods. Two it is very lean meat, actually all white too. I love it. Tastes like chicken. The body needs much more naturally saturated fats than rabbit can provide. It's very good, naturally low-fat though so it's best cooked in a gravy so it doesn't dry out. I also eat venison (deer) quite often. There's some in my freezer right now. Some are not fond of the taste but, properly processed, it's very good.
