Once I forgot some homemade mayonnaise (to which I had added whey) in the fridge--it must have been 2 years old when I found it--and it was just delicious! Really thick with a wonderful flavor. I make mine with whey, and sure, it was a bit of a leap to try it the first time, since I've been so conditioned to be afraid of mayonnaise that's been left out (with whey, you leave it out for 7 hours before refridgerating). It has been absolutely wonderful! I use organic eggs, and I just keep thinking about all the good that I'm getting from the raw egg.
