Quinoa Full Meal

1 recipe Easy Baked Tofu (I will type this after the main recipe.)

1 3/4 cup water

1 cup quinoa, washed and well drained

1/2 tsp. sea salt

1 Tbsp. olive oil

1 cup finely minced onion

2 tsps. finely minced ginger root

1/4 tsp. sea salt

1 carrot, minced

1 Tbsp. natural soy sauce

1 cup whole kernel corn (fresh or frozen)

Prepare Easy Baked Tofu and cut into small cubes. Set aside. Bring

the

water to a boil in a covered saucepan. Add quinoa and salt. When

water

returns to a boil, reduce heat, cover, and simmer 20 minutes. Set

aside.

Heat a saucepan and add oil, onion, ginger root, and sea salt. Stir

and

cook 2 minutes. Add carrots, reduce heat, cover and cook 3 or 4

minutes,

until vegetables are tender, stirring occasionally. Stir tofu cubes

into

the onion-carrot mixture. Add quinoa, soy sauce, and corn. Cover and

cook

5 minutes.

Easy Baked Tofu

1/4 cup natural soy sauce

2 Tbsps. water

1 Tbsp. lemon juice

1 tsp. maple syrup

1 tsp. toasted sesame oil

2 scallions, thinly sliced

1 tsp. ginger root juice (grate and squeeze)

1 (10 oz.) pkg. extra firm tofu

2 Tbsp. sesame seeds (optional)

Combine first 7 ingredients in a mixing bowl to create a marinade. Cut

tofu

in 8 equal pieces. Cut in halves horizontally, then each half into 4

equal

pieces. Place tofu in a shallow dish and pour marinade over tofu.

Place in

refrigerator for at least 1 hour, or overnight.

Preheat oven to 450 degrees and oil a baking sheet. Place marinated

tofu on

prepared baking sheet and sprinkle with sesame seeds. Bake 10 minutes.

The Easy Baked Tofu recipe is also great with

brown rice and veggies for a meal, too.
