It is a lot of work at the beginning (learning new recipes, trying to figure out WHAT to eat, how to read labels, etc.) BUT Even though it didn't improve my health (get rid of CFS/fibro), I'm glad I tried it. What I learned in 10 months: Teff creal, the smallest grain in the world and grown in Iowa, I think -- I was able to buy bulk and save $$ -- is a wonderful grain, and since oatmeal makes me throw up, a nice hot breakfast cereal; teff flour makes excellent, earthy scones. Garbanzo bean flour, which makes a fantastic 'bread', normally found in Nice (k.a. Socca) -- topped with rosemary & olives, it's just amazing. (Just 1 cup GB flour, 1 cup warm water, a tsp. fresh chopped rosemary, and 1-2 TBS olive oil and 1/2 tsp. salt - let sit for an hour, then pour in an oiled, hot cast iron skillet and bake at 400 for 20-25 minutes - man that is good eating!) Tapioca flour makes amazing cheese rolls and pizza crust. Tinkiyada brand pasta is fantastic, and we eat it (when I can find it on sale) even though wer'e not celiacs because it's such an excellent product. Pamela's GF pancake mix is great -- you won't know it's GF, and makes great muffins. Add some GF chocolate chips and orange juice for the liquid, and you have a Jaffa muffin - those are good eating, too :-) Rice flour piecrusts stay crisper than wheat flour ones. Homemade Multigrain GF flour crackers beat out any other cracker I've ever had. Sweet rice flour makes a great white sauce. Amazon has great prices on bulk GF foods. If you can afford it for a few months, I'd try it. It did open up a whole new cuilnary world I would not have otherwise known about. So those are my tips.
