I just used a small grater, but it is so fibrous, it makes it hard to grate. I peeled my ginger too-is this correct? 2) how long do you have to pound the carrots with a meat pounder? Thanks! I've never had stock go bad. There was a thin non-fatty scum with suspicious petrie-dish-resident-thingies floating on it. Looking at the food safety guidelines I was able to find (impossible apparently to find a state home economist the day before July 4th), I decided not to chance it. Oh well, it didn't take much effort to make and wasn't that expensive (pretty cheap, really), so I'm not scarred for life. Maybe just for this weekend. Lynn S. Did you grated them? Ina Hi folks-- Has anyone used the ginger carrots recipe from NT? I made some and the carrots must not have been very juicy because no matter how I pounded I got hardly any juice out (they'd been in the fridge a while). I ended up adding some water to cover after pressing the carrots down well. They smell fine, but the juice/water seems to be rather mucilaginous--goopy, almost. Should I be worried? I went ahead and ate some because I'm just generally stoopid and they were tasty...
