Whole wheat cinnamon toast cake recipe

This is a wonderful recipe that I adapted to fit with NT's

principles. It's kinda like a coffee cake.

Whole Wheat Cinnamon Toast Cake

2 cups freshly ground whole wheat flour (or if spelt, use 2 1/2 cups)

4 Tbsp. whey plus enough water to equal 1 cup

combine these and let soak for 12-24 hours

1 egg (or 1 heaping Tbsp. of ground flax seed blended with 1/4 cup

water is a good substitute for an egg)

1/4 cup melted butter

1 1/2 tsp vanilla extract

1/2 c. honey

1 tsp salt

1 tsp baking powder

1 tsp baking soda

combine these ingredients in a bowl, then mix in the soaked flour

well. I use my hands to mix it. Then let sit a minute or two so it

will get a little fluffy. Pour into a greased 9 x 13 inch pan, bake

at 350 for 20-30 minutes until golden.

Poke cake all over with a toothpick. Brush with 2 Tbsp. melted

butter, and sprinkle with a mixture of 1 tsp. cinnamon and 1/4 cup

Sucanat. Very yummy!!
