Guest guest Posted July 22, 2001 Report Share Posted July 22, 2001 Sour Dough English Muffins 1/2 cup milk, at room temperature 1/3 cup Sourdough Starter 2 tsp sucanat or honey 1/2 tsp salt 2 1/2 to 3 cups flour 1. Combine milk, Starter, sugar and salt and mix. 2. Very slowly drizzle just enough warm water into flour mixture so dough forms a ball that cleans the sides of the bowl. 3. Grease a cookie sheet and sprinkle generously with cornmeal. Roll out dough onto lightly greased surface until about 3/8 inch thick. Cut with floured 3-inch round cookie or biscuit cutter (or glass). Place cutouts on prepared cookie sheet. Reroll and cut out leftover dough. Sprinkle cutouts generously with cornmeal. Cover loosely with plastic wrap and let stand in warm place until doubled, or put them in the fridge overnight. 6. Heat a lightly greased, large fry pan over medium heat or an electric fry pan to 275 degrees. Cook muffins, uncovered, on each side until golden, about 10 minutes a side. Cool on wire rack.
