A patient gave me some allegedly " raw " honey but as it has never crystallised I conclude that it was not raw as even the commercial honey I buy crystallises after a while.< Jane- Raw does mean unpasteurized, but to be truly raw it must not have been processed with heat above something in the 90F range (I forget the actual number). The best raw honey is never heated and as Chuck said, centrifuged, and the best indicator is either whole comb pieces or bits and flecks of comb in the honey. Crystallization has everything to do with sugar content, source pollen and conditions at time of the bee's taking of the pollen and making the honey, not much at all to do with pasteurization. Any raw honey may quickly crystallize or may not crystallize at all. I've been buying centrifuged, unheated raw honey with and without comb from the same lady for years now. Some of it crystallized within weeks and some is liquid after 5 years. I actually prefer for some of the comb honey to crystallize because it disrupts the structure of the comb and makes it much more chewable. Daddybob No virus found in this outgoing message.
