Sourdough Bread

2 cups sponge

3-4 Tbs butter

½ cup milk

1 tsp salt

4 Tbs honey

3 cups flour

Melt butter. Add milk, and honey. Stir into sponge. Add flour and knead for 5 min.

Let sit for 20 min.

Add salt and knead for 5 min.

Shape into pan or form freeform loaf and proof (3-6 hours, depending on starter).

Cook at 375 - 400 for 25 min with steam. Remove steam pan and cook for 15-20 min more. Remove from pan immediately and let cool.
