Guest guest Posted November 25, 2004 Report Share Posted November 25, 2004 Anja, Is a Xmas Pudding Cake a mound shaped cake with lots of dried fruit and brandy mixed in? Ok here's my shot at a vegan recipe. Basic vanilla pudding: 1 pint plain amazake 3 TB kudzu or arrowroot 1 tsp vanilla 1/4 teaspoon ginger juice 1/4 tsp nutmeg or coriander Dilute kudzu or arrowroot in the smallest amount of water possible, when completely disolved ,add amazake and slowly bring the mixture to a boil,s tirring constantly. One or two minutes after the mixture thickens completely, turn off the heat. Cool several minutes and add vanilla,ginger,and other spices. Chill pudding or eat warm. Now if I was to go on to make a xmas pudding cake. I'd make a double recipe of pudding but flavor it with some rehydrated diced dried apples and apricots and raisins. I'd make a cake batter using the pudding, by adding whole wheat and millet flour with baking soda and salt. The amazake will make it sweet.I'd add some fresh persimmon, a few diced dates, some wheat germ, allspice, cinnamon. To get the mound shape I would bake the cake in a stainless steel mixing bowl. You know...your basic pudding-basin haircut bowl. I'd probably make several smaller mound cakes rather than one large one so I could give em away as a xmas gifts. I might pour a bit of brandy on a special one destined to Anja. Please, help me imagine this recipe. What else do we need or what options would help make Anja's xmas pudding (cake) special? What can we do? We have a few weeks still to think up recipes. 1st annual Vegan-Macrobiotic Xmas Pudding (Cake) Recipe contest begins! Anja, will you be the judge?
