My cracked on the top but never cooked in the middle.> i haven't tried the recipe in the bk, but cracked on top/not cooked in middle sounds as though it was cooked too fast, that is, at too high a temp, although you followed the recipe. i am very interested in others' comments as i am a southerner and i do love my cornbread. i recently received _NT_ as a xmas present to myself and have yet to make anything. too busy eating all the info. i am very excited as i have a degenerative disease (muscular dystrophy) and have already started noticing strengthening, not due to exercising, but apparently due to changes in my diet. i used to be lacto-ovo...until i discovered that i was allergic to dairy: too many yrs of dairy abuse. now that i have cut out dairy (and eat lots of seafood and some chicken), however, i suffer from psoriasis and hair loss. but if i eat dairy, my stomach becomes distended (i have IBS), and i have a hypotensive reaction (i start to go into shock). the latter is only once a month. i wonder how something that could be that bad for me also be good, and i hope that the answer lies in the raw/grass-fed vs pasteurized/battery. does anyone have any insight? There are several artices which might address allergies and another on chronic fatigue that might have info you can use. http://www.WestonAPrice.org/ Another angle on the dairy intolerance may be using fermented milk products- kefir and yogurt.
