You can make coconut milk yourself with fresh coconuts or you can buy canned organic coconut milk from the health food store. I make milk and coconut milk kefir and love them both. Yes, there is a Water Kefir, there is much info on Kefir here: http://users.sa.chariot.net.au/~dna/kefirpage.html If you can get the milk Kefir grains and make Kefir yourself, I believe you can make it with things like almond and other nut milks, and coconut milk. I know people who make it with Soy milk (eeew!).
