Hey there,

How much do you pay for your milk per gallon? You would need to factor

in your time spent in making the cheese, and buying or obtaining somehow,

some cheese culture.

I've learned that typically 1 gallon of milk yields 1 pound of cheese

(and LOTS of whey!). The yield may vary somewhat depending on animal (goat,

cow milk) and specific cheese culture.

Sally Fallon claims cheese is the only complete food that humans need!

Hi, Sara. Right now I pay $5.80/gallon of milk. I have found a place where I

can get it for $4, but it is an additional hour away and with gas prices, I

don't know if it would be worth the drive.

I don't really mind spending time doing it- it is just another skill I would

have:-) If I were to sell it, then I would worry about the time it takes me.

Is there any use for the whey left over?

I have Sally's book on order through my library. I am surprised that she has

that opinion on cheese because I always hear how breast cancer and cheese

consumption correlate! I just haven't bought into it yet. More research

really needs to be done on raw/pastured cheese. Maybe there is more out

there and I just haven't seen it yet...I am sure there are some indigenous

cultures who consume cheese.

Depending on the cow the milk comes from, anywhere from 3/4 to a pound of

cheese per gallon. Jersey milk generally has a higher yield than Holstein,

because of a higher percentage of solids to water in the milk.
