Guest guest Posted March 20, 2004 Report Share Posted March 20, 2004 The thought occured to me that perhaps the yellow color of Jersey milk, and especially Jersey cream, might be due to it being extra rich in beta-carotene (or other carotenoids). As I undertand it, green growing things are very rich in this fat-soluable(?) form of pro-vitamin A...
