Diabetes Type I

I have an 11 year old male patient who was diagnosed with diabetes type I at the beginning of November. He still has some pancreatic function remaining, but the doctors are waiting for that to 'burn itself out' so they can regulate his insulin easier. I have 2 questions:

1) First does anyone have any input on stopping or reversing the beta cell damage. He has about 2 more months to save the remainder of his pancreas.

2) Second, what type of carbohydrate load do you recommend.

The nutritionist, that his endocrinologist wants him to follow, has recommended 75 grams of carbs per meal. Ugh! Seems like a huge amount for an insulin challenged individual. Since we are attempting to better regulate his insulin he needs to be, not only following the anti-inflam diet, but also tracking his carbo intake. Any suggestions?
