Welcome to the list! Just a few days ago, I started a poll about milk temperature preferences. Please vote by going to the home page for this group and clicking on " polls " . So far there's only one vote (mine) for " fresh from the cow " ! Come on Maurice, I need some help! I think there is a physiological fact of the matter about taste perception and temperature, but I don't know the details. In general, it seems clear that you can perceive more subtle details of taste at medium temperatures, not the extremes of hot or cold. I've noticed how much the flavor of water changes at different temperatures, and if you boil it and let it cool in a mug for somewhere in between 5 and 10 minutes there is this amazing flavor sensation I can't really describe but I always experience drinking hot water (plain or tea) at the right temp. A friend was visiting yesterday who had never had raw milk before and I took a jar of milk out of the fridge and left it on the counter for a half-hour or hour or so to let it get closer to room temp. When I explained my rationale, she said she has the same view about having a more sophisticated taste experience at medium/warm temps, and she loved the milk and found it very different than anything she'd had before. We drank it " wine taster " style and noted a lot of amazing subtle qualities to the flavor. Recently on two separate occasions from two separate batches of milk from the same Jersey herd, I caught on to the faintest trace of something that reminds me of chocolate, which might just be my brain's code for " wow! yes! yes! " . It's subtle. It's so great to experience the change in flavor with the seasonal cycling of the cow's diet. I have some thoughts about the chilling data collected so far by the poll. One is simply that some people may have never tasted warm milk, and don't have much to compare to. I find milk cold from the fridge quite delicious too, but compared to warmer temps it seems like a crude oversimplification of milk's true flavor. Another thought is that milk is almost always drank cold because of the practicalities of storage, so people are just used to that. If they had equal exposure to cold and warm milk their perceptions might be different. Another thought is that in our culture few people really eat slowly and mindfully to the extent that reveals the full depth of flavor in real foods. I love chewing on a mix of 15 or so different raw sprouts and experiencing all the different flavors bouncing off each other in amazing ways, including a variety of bitter flavors. Also raw brain has such an amazing flavor that I like to let it linger a bit on the tongue. Those are just things I ate today so they're on my mind, but I guess I could list dozens of examples if I start to really think about it.
