Hi!

There ARE many concerns out there about non-stick coatings. I live alone and

am not too experience in cooking meat BUT after 2 1/2yrs on ER4YT, I will

swear by a cast iron " fry pan " I use which is about 9 inches square and

after constant use develops a " patina " that is almost akin to non stick

cookware. I use it for steaks and other meats on stove top, also in the oven

top roast chicken, turkey legs (an EXCELLENT high protein/fat quick meal)

and even for eggs, like grandma used to do!

This is inexpensive, easy to clean, unbreakable (!) and I suspect the bits

of iron that may get into our food could be beneficial.

P.S. POLENTA is corn meal......Try some risotto (Italian short grained rice)

which is yummy when cooked with asparagus, locatelli (sheep) cheese, etc.

There are zillions of recipes which can be adapted to " O " diets.

On the subject of specialized after school and summer programs, The Lake

Houston YMCA has teamed with Humble ISD and the Village Learning Center to

provide after school care for children with disabilities in the

Humble/Kingwood/Atascocita area. This program was promoted by parents,

especially those already working with the Y to provide a once-a-month

Special Kids Night Out. From what I understand, this Y is one of the first

in Texas (perhaps the country) to do this. Elementary aged children are

included in the regular after school care program (although the price is a

little higher, I think), some middle school students may also attend that

program, while older students go the the Village Learning Center. The

District provides transportation from the student's campus to the

appropriate after-school program. Some kids with mild disabilities also

just attend the regular after-school care on their home campus. The only

problems I've seen so far are the difficulty in incorporating children who

have aggressive behaviors. For the most part, these children have

difficulty finding placement anywhere because of the lack of knowledge and

experience in Positive Behavior Support programming. Also, the ARC of

Greater Houston provides several week-long " Sports Camps " around the city in

the summer as well as Camp Champions-- a sleepover week at Camp for All for

children 8 and up. There are a number of other " camp " type programs, but

not summer-long programs other than extended year services " EYS " provided by

the school districts (and those can be pretty chaotic for our kids). There

also are some private summer programs offered by the private schools that

work with kids with autism (Westview, InKids, etc.). It would be

interesting to here about programs in other parts of Houston, as well as San

, Dallas/Ft. Worth, Austin and other areas from people on the list.
