Guest guest Posted March 8, 2004 Report Share Posted March 8, 2004 Hi Jill. Truly kefir is a miracle food, I believe. It keeps 30 days or so in the fridge for me. It tastes like a mild, pleasantly sour buttermilk. Raw milk kefir has been the best thing I've EVER done for my health. I used to have chronic urinary tract infections. They were SOOO painful and I would get about one every 2 months. My flora was out of balance "down there" in my plumbing. Too much yeast and not enough good bacteria to fight off e-coli. The e-coli would travel up the pipes and cause infections in that weakened area. And of course, conventional urologists put me straight onto antibiotics. It was destroying my health. So sad. After I started drinking kefir smoothies ever morning about a year ago, they stopped completely. I haven't had an infection since. There have several incidences also where people around me were food poisoned by sandwiches and things, say, at church pot lucks. I, however, did not get sick. I fully attribute my strong immune system now to the kefir. I also ferment and drink kombucha tea and sauerkraut. I also eat really raw honey and coconut oil, raw butter, raw cream, raw eggs, and raw milk. I eat my meat rare to raw. I will have the occasional salad as well. But I attribute my healing to kefir. One more question....some of the things I have been reading seem to say that the type of Kefir grains you use makes a big difference in the quality of your kefir. Do you feel this is the case? I love hearing about all the raw food people are eating. I'm now eating raw dairy, eggs, lots of veggies and am slowly working up to the fermented dairy and veggies. The dairy is thus far amazing. Drinking kefir is heaven on earth. I like it thick, thin, mild, sour, or however it turns out for each batch. I could drink a quart of kefir in one sitting a few times a day easily. (I don't, but it sure is tempting.) Kefir is incredibly easy to make, maybe less than one minute per day. In the past 13 months since I started making kefir almost everyday, I have never used a strainer. I either use chopsticks or a wooden spoon to lift the grains out, or I pour the kefir out into another jar and place a chopstick or wooden spoon across the mouth of the pouring jar to block the grains from slipping into the receiving jar. When you treat your grains gently like this, they stay in big clumps and don't break up into little grains that are less convenient to remove. I use mason jars with the standard white plastic lids you see in stores in the mason jar section. Kefir grains, two mason jars, two lids, and a chopstick would be enough to make kefir for the rest of your life; just add milk. I have an idea for straining kefir that I've never tried because my current methods work great, but just in case someone else likes the idea here it is: you can just drill some appropriately sized holes in one of these white plastic lids (they are extremely inexpensive) and to strain just screw on the holey lid and pour. This would cost less than a dollar and take less than five minutes to make. " I saw a bunch of people talking about them in the kefir and other groups and had the brainwave to make my own. I'd have ordered those, but hey, this is FREE for me! One sheet of plastic canvas made a WHOLE BUNCH of circles that fit perfectly into the mason jar ring and screw right on. Everyone has their own special technique.
