Relative to eggnog, I have some ideas that I wanted to share with you and the group. Idea # 1: There is a product from Oregon Chai (www.oregonchai.com) - Chai Nog Chai Tea Latte. The drink is made with 1/2 Chai Nog and 1/2 milk or milk substitute. It is quite tasty. Notice that it has ginger and vanilla for spice. The ingredients for Chai Nog: Water, organic evaporated cane juice, organic black tea, natural flavors, organic vanilla*, organic spices*, honey, citric acid and organic ginger*. ( * = extracts). Idea # 2: If one doesn't have " good " cream, I saw a recipe that uses 1 1/2 cup raw milk, 2 eggs, 1 Tbsp. honey, 1 tsp. vanilla and a dusting of nutmeg. In the book " Not Milk, Nut Milks " , there is a recipe for " Mock Eggnog Cashew Milk " ISBN 0-88007-218-0 (trade paper). Author: Candia Lea Cole It is too involved to tell you how to make it, but there is about 2 1/2 to 3 cups of liquid cashew " milk " , and then the following amounts of additional ingredients, which will give you an idea of ratios of sweeteners and spices. 3/4-1 tsp grated lemon rind Scant 1/2 tsp. nutmeg powder 2-3 Tbsp. honey 1 1/2 tsp vanilla extract dash of cinnamon dash of barley malt sweetener powder or pinch of sucanat (optional) Idea # 3: One could use real milk and good eggs to make about 3 cups liquid, then add the other ingred. above. (maybe 2 cups milk and 3-4 ?? eggs to make up the other cup). Idea # 4: Make up the Rice Milk or Almond Drink recipe from Nourishing Traditions, page 592, and use as base for egg nog - just add some eggs and spices as desired. Do you think fermented grain or nut drink will work for egg nog ?? I have not tried any of these " make 'yer own " ideas yet, but will try some and let you know which one(s) I like. Why not give them a try too !!! Notice that vanilla is used in all the recipes. Idea # 5: Oh ya, you may also want to add a " DASHer " of rum or rum flavoring !! Regarding nutmeg - I got some whole nutmeg at my health food store - I believe it was from Frontier. And, there is a company, Bounds Ltd. that makes over 200 styles of chef's mills - one is designed for nutmeg. I found my combo salt/pepper mill at Bed, Bath and Beyond but don't know if they carry the nutmeg mill. So I don't have any experience with their nutmeg mill, but their mills appear to be high quality - 25 year guarantee on the grinding mechanism.
