I get my goat's milk on Tuesday, and my grains. I'll hopefully get your grains later too. I will hopefully kefir some goats milk next week therefore. Don't feel bad about the cheese..I've found taste can vary quite a bit from producer to producer..I guess a lot is based on the content of the herd's milk. One's cheddar cheese would be different than another's cheddar cheese. My regular supplier does only cheddar and monterey jack. My whole family doesn't like the cheddar! (Aged cheeses such as Gouda and Tilsit are available too but they're sharper and that's not so "kid friendly.") But Janet's cheddar cheese is delicious. Go figure. And don't let your kefir starve in the meantime! LOL Sara Now, if I was only a fan of cheddar....I guess the famis going to get an unexpected gift. Because they told me the same thing--only the Cheddar and Colby are raw. I think it's called Meadow [something]. Thanks for the info, I will definitely ask again tomorrow when I place my week's order! I will flip if I am told this time around the cheese is not raw! (And no I don't flip often!) We were on the phone with the folks from Greener Pastures this morning - getting our order lined up for next week. Just by chance the word RAW came up - and I was told "we cannot do raw any longer - the state was causing too many problems!" Well!!!! I guess I'm about fit to be tied here - we're trying to locate a good - reasonably priced RAW cheese to carry in our store. It's not easy by any means. We also travel to Ok to a dairy and buy raw cheese that is also very good. They do mail order but there mail order cheeses are in gift boxes and pretty expensive. Swam Bros Dairy in Claremore, Ok.
