You might lose some, just like you would cooking vegetables. It is kept refrigerated to keep it from getting rancid. They process the capsuls different (refine them more) to give them a longer shelf life, and that cuts down on the potency. I think that if you bake your own breads..muffins, cookies, whatever..that it would be a great way to introduce it into your families diet. This is a good question, I'll check with the woman at the natural foods store and let you know what she says...and try to get some of her cookie recipes.
