In one of his cookbooks that I have, there is a recipe for Chicken with Balsamic Vinegar. You take bone-in, skin-on chicken thighs (about 3 pounds) and marinate them for at least 2 hours in 1/4 cup balsamic vinegar, 2 Tbs. chopped fresh basil and 3 cloves crushed garlic with a couple of tablespoons of olive oil. You then grill the chicken over medium heat for 10 minutes on each side to brown and flavor the thighs. Reserve the marinade! Because you then bake the chicken in a preheated oven for 15-20 minutes or until the juices run clear while basting with the marinade. Or, I just put the chicken back in the glass dish with the marinade and bake it in the covered grill until done. Either way, if you like Italian flavors, I think this recipe is worth it! Also, you don't have to use expensive balsamic vinegar, a moderately-priced one will be fine. Kathy > > Anyone have a yummy recipe using chicken thighs they would like to > share?
