Yummmmmmmy sounds delish! I have a brilliant idea.. The salad

would make an excellent dish to bring to Marta's pool party August

Yes, it would make an excellent dish for Marta's pool party- however,

I don't know if I will be back from a trip in time to go to the party-

so anybody else thinking of making it feel free!

Recipe for Elle (Thai Chicken Noodle Salad)

OT

Elle-

I was looking through the August Family Circle and came across this

recipe, maybe it's the recipe you had asked for? Note that PER

SERVING...this has 35 GRAMS OF PROTIEN....yikes! Also, it doesn't

seem that difficult to make- I would probably toss in some " whole "

peanuts...just to add variety and more protien.

Thai Chicken Noodle Salad

Makes: 6 servings

Prep: 15 min. Stand: 5 minutes

1 rotisserie chicken (2 1/2 pounds from grocery store)

4 cups water

2 pkgs. (3 ounce each) ramen noodles

3/4 c reduced-fat- room temperature, creamy peanut butter

3/4 c light coconut milk

1/4 c lime juice

1/4 c chopped fresh cilantro

1 Tablespoon sugar

3/4 teaspoon salt

1/4 teaspoon cayenne

6 scallons, trimmed, thinly sliced

1 small seedless cucumber, pared halved lengthwise, cut into 1/4-inch

slices

1. Discard skin from rotisserie chicken. Remove meat; cut into

strips. In medium-size saucepan, bring water to boiling. Break each

package of noodles into 4 (save seasoning for future use). Add ramen

noodles to boiling water. Remove from heat; let stand, covered 5

minutes.

2. Meanwhile, in large bowl, whisk together peanut butter, coconut

milk, lime juice, cilantro, sugar, salt and cayenne until smooth.

Add chicken, scallions and cucumber to peanut butter mixture.

3. Drain noodles;rinse with cold water. Add to large bowl with

chicken mixture; toss thoroughly.

Nutrient Value Per Serving:

476 calories, 25g fat (6g saturated), 35g protien, 30g cabohydrate,

3g fiber, 817mg sodium, 67mg cholesterol.
