First off, they were too big to fit into my cast-iron skillet, so I had to use two pans to fry them up! They were absolutely delicious- the best ever I've had in my life, I would say! I grew up on dry overcooked thin chops, yuck. That memory never encouraged me to buy pork chops- I've probably bought them only once or twice since I left home and we're talking 25+ years here. But these pork chops, yum, they were succulent and needed nothing more than a judicious use of salt and pepper, if that. The fat content was totally amazing! Very happy hogs they were, I am sure (and huge!) ;-) Thanks for sharing with us, Will, this awesome opportunity. Let us know if we can buy quarters/halves of hogs some time in the future.
