Hi all,

Here's my fuel for the day:

M1: Power oatmeal

M2: cottage cheese & apple

M3: Tortilla soup*

M4: grilled chicken, orange & carrots

M5: either grilled chicken or tri-tip, brown rice &

veggie (have broccoli, cauliflower & asparagus all

ready for steaming)

M6: 1/2 Myoplex

*Tortilla Soup*

(Makes 8 servings)

1/2 c. chopped onion

1 [28 oz.] can of whole tomatoes, undrained

1 [15 oz.] can of kidney beans

1 tsp. cumin

1 tsp. worcestershire sauce

1 can of fat free tomato soup

2 cloves of garlic, minced

1 can of Green Giants Nibblets of corn, drained

1 tsp. dried cilantro

1 tsp. chili powder

1 [14 oz.] can of fat free beef broth

2 c. cooked chicken breasts, cut into thin strips

1 1/2 c. Kraft fat free shredded cheddar cheese

24 Baked Tostidos chips

In a stock pot combine, onion, tomatoes, kidney beans,

cumin, worcestershire sauce, tomato soup, garlic,

corn, cilantro, chili powder, beef broth, and chicken

strips. Bring all to a boil then reduce heat cover and

simmer for about 30 minutes.

To serve pour one serving into a bowl sprinkle 3 T. of

cheese on top and crumble 3 chips over the top.

Makes 8 servings.

Nutritional stats per servings would be:

Calories:225 ~ Proteins:25g.~ Carbs:27g.~ Fats:2g

Hi ,

Menu looks tasty (as usual). That tortilla soup sounds

interesting... not sure about the cheese though, I just can't stomach

fat-free cheese. LOL

Here's mine:

M1: protein powder/fibre shake (nixed the carb, having lunch out

today and that's gonna be a little carb-heavy)

M2: cheeseburger pie (recipe below)

M3: lunch out, not sure what, but it'll be authorized

M4: chicken breast, carrots, brown rice

M5: turkey *winks at Regina*, salad and potato

M6: protein powder/fibre shake

Last night I had this 4% fat lean ground beef in the fridge and I

just could NOT figure out what to do with it. I was having an " I'm-

tired-of-the-same-ol'-thing " evening, so I modified a recipe off the

Bisquick box. Okay, okay, Bisquick doesn't really fit in the

authorized carb category, but when you see the recipe, it's only 2 T

of the mix per serving, so I figger it's okay once in a while.

Considering that I usually fix totally gourmet stuff, this was a

departure from the norm, totally welcome last night! ;)

Cheeseburger Pie

1lb extra lean ground beef

1 c. chopped onion

salt & pepper to taste

2 oz. lowfat cheddar cheese

1 c. skim milk

4 egg whites (or 1/2 c. egg substitute)

1/2 c. Bisquick

Preheat over to 400 degrees. Spray a 9 " pie plate with non-stick

cooking spray. Brown meat and onions in a frying pan and drain on

paper towels. Salt & pepper to taste. Place meat and onions in pie

plate and sprinkle with cheese. Mix milk, egg whites and Bisquick

together until smooth. Pour over meat/cheese mixture. Bake for 25

minutes until browned on top, or until a knife inserted in center

comes out clean. Servings: 4

Calories: 297

Protein: 37g (50%)

Carbs: 15g (20%)

Fat: 10 (30%)

Add a big serving of veggies and it will bring your macros up to

40/40/20.

Wow, Jen, I have a similar recipe for cheeseburger pie

that just last night my daughter requested. Actually,

she just said she liked that better than the tortilla

soup. I'll have to find the recipe and post that one.

I have another recipe for chicken chili verdi that I'm

going to plug into DP and see how BFL-friendly it is.

Mmmm, time for M4 :)

I didn't but I'm sure you could! I don't think it would make much of

a difference nutritionally though, since there is so little Bisquick

in each serving. :)
