Guest guest Posted May 16, 2008 Report Share Posted May 16, 2008 I am excited to try our first batch of coconut Kefir. I do have a couple of questions, though. I accidentally heated the coconut water to 120 degrees because I did not expect it to heat up so fast. I got it cooled down to 110 degrees but had to head out the door to an appointment so I went ahead and added the kefir starter from Body Ecology. Will that heat be too high or will it be okay? Also, I am putting this in quart canning jars to ferment. Do you fill the jar to the very top where there is no room or do you leave an inch or so for room to ferment? Thanks for help. Can't wait to try this kefir!! I will try it first and then if it seems fine will give to my boys. Any thing to be careful about if they have major digestion issues with celiac disease or is this easy to digest?
