Guest guest Posted May 23, 2002 Report Share Posted May 23, 2002 Here's the turkey meatloaf that I found: 2TBSP butter 1 cup chopped onion 3 cloves garlic, minced 1 pkg. Lean ground turkey 1/2 cup fresh bread crumbs 1 large egg 3.4 cup ketchup 2 TBSP Worcestershire sauce 3/4 tsp. salt 1/2 tsp. ground black pepper Heat oven to 350 degrees. Melt butter in a small skillet over medium-high heat. Add onions and garlic; cook 5 minutes, stirring occasionally. Transfer mixture to a large bowl; cool 5 minutes. Add turkey, bread crumbs, egg, 1/4 cup ketchup, Worcestershire, salt and pepper to onion mixture; mix well. Pack into an 8x4inch loaf pan/ Spread remaining 1/2 cup ketchup over top. Bake for 50-55 minutes or until no longer pink in center and internal temp. of loaf reaches 165 degrees. Let stand at room temp 5 mins. before slicing. Makes 5 servings. Protein 30 g/ carb 16 g / fat 7 g When I made this, I forgot to put in bread crumbs and it still tasted good. I think the bread crumbs were used to collect all the fat you will see on the bottom. I did not revise this recipe. Does anyone have any idea to revise it? like for butter? Maybe use olive oil instead of butter? Let me know. Spray the pan with non- stick spray and you can cook the onions and garlic until they turn clear. You just have to stand there and watch them. Here's my super-speedy turkey meatloaf recipe. This was something I threw together out of desperation one night. Fast Turkey Meatloaf 2 lbs extra lean ground turkey breast 1 envelope Lipton Onion Soup Mix 2 egg whites 1/2 c. uncooked oatmeal. Combine all ingredients together in a bowl and knead by hand until all ingredients are thoroughly combined. Divide in half. Place each half in a bread pan sprayed with non-stick spray. Bake at 350 degrees for 35-45 minutes until loaf pulls away from sides of pan and juices run clear. I found an 'organic' ketchup that has no sugar added (I think Heinz made it). I know I bought a generic brand of soup mix and it had sugar added. Also, I bought wheat crackers...I know they're not whole wheat, but better than just white? I'm glad everyone's posting new menu ideas, they've been exactly what I was thinking. I finally found a 'fresh' turkey breast with the bone in...most of the frozen ones have 'broth' added. The Lipton Onion soup mix doesn't have any sugar listed on the label (see below) which was one of the reasons I picked it as a quick add-in for the meatloaf. I usually like the chop and dice all my ingredients fresh, but sometimes ya gotta use the packaged stuff. I haven't been able to find good sugar-free ketchup. I just don't use it at all unless it's free day and I am having a cheeseburger. Jen ........................
