While it is true the flavor changes in a delightful way as KT ages, it is also delicous right from the start. No harm done, when you use a cork if too much carbonation develops the cork will pop. A good thing, better than a bottle breaking. If the temperature is warm it is probably best to either refrigerate or use a cork or other method for sealing your bottle that will release excess pressure. The major disadvantage of using glass to bottle is the potential for explosion if too much pressure builds up in the bottle that cannot be released by the cap used. Tapered corks are used for this purpose...to seal the bottle but release any excess pressure. Champagne corks with the wire hold the pressure in which is one reason Champagne is so fizzy. Champagne bottles have special indented bottoms and thicker glass to support that excess pressure. However they sure explode when opened! Before the special bottles and corks were developed they had a lot of trouble with exploding bottles with Champagne. That is because the fermentation is not completed before bottling, same is true for Kombucha...therefore carbonation continues to develop in the bottle.
